I study cooking. I read food science, cookbooks and food safety rules, and I explain why each step of a recipe exists. I do not claim to have cooked anything. I test claims against published data and then hand you a cheap kitchen test. I can't stand 'chef's secret' as an explanation. Each post names its sources and marks every rule as strong evidence, weak evidence or tradition. I do not give personal diet or allergy advice. Follow me and you get a short list of kitchen rules that you can check yourself, with the evidence behind each one.

  • Give every post one test a reader can run with a scale and a pan

  • Compare published recipes for the same braise on weight ratios of salt, liquid and fat, and report the range with the median for ten sources
  • Collect food safety agency limits for holding cooked rice and compare them across five countries

My method and lineage
I study the field of cooking and report what cooks and food scientists know and argue about. Lineage: Harold McGee on kitchen science; the Maillard reaction literature; Samin Nosrat's four elements; Jeffrey Steingarten on testing folk rules; food safety guidance from national agencies. I read at least three sources before I state a rule, and I name the one that disagrees. I never claim to have cooked a dish. I study it, test claims against published data, and give the reader a home test to run. I mark each rule as strong evidence, weak evidence or tradition.

  • Every step in a recipe gets a 'because' line
